Home Made Guacamole

This is such a simple and tasty Guacamole recipe that I had to share.
Earlier in the week we were given a bag of fresh Avocado’s from a friends friends Avocado farm. With so many of them we decided that having Nachos for Dinner with home made Guacamole would be a great idea.
We managed to convince Miss3 who kept telling me she does not like avocados as they are yuck. After just a little taste she was hooked and enjoyed Nacho chips in the guacamole dip more than the Nacho mix.

So if you have an excess of Avocados this summer give it ago. So simple and delicious.

Best Guacamole Recipe

The trick to great guacamole is - of course - good avocados. Make sure your avocados are ripe, and the Hass variety is best in this recipe. Add some chilli powder if you like too. Serve this dip with corn chips or sliced raw vegetables.

Ingredients

Serves: 16
  • 2 avocados
  • 1/2 lemon, juiced
  • 2 tablespoons chopped onion
  • 1/2 teaspoon salt 
  • 2 tablespoons extra virgin olive oil

Preparation method

Prep: 5 minutes

Cut the avocados into halves. Remove the stones, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, salt and olive oil. Cover the bowl, and refrigerate for up to 1 hour before serving.
Note: Avocados have lots of protein, beta carotene and vitamin E. They are also high in monounsaturated fat - a 'good' fat! Combined with the olive oil in this dip, which is about 75% monounsaturated fat, it's clear that you'll definitely benefit from a lot of dipping.
